“But, what do you eat?” One of the many dreaded questions I face every day when someone finds out about my lifestyle. But it’s not because I don’t want to answer, it’s because I couldn’t even narrow down my answer. There are so many things that are vegan pantry staples.

I eat SO MUCH. And so many different things every day. But if you’re starting out vegan and want to prepare your kitchen, these are the foods I tend to have on hand. The most important thing will always be fresh produce, but there’s plenty you can load your cabinets up with. I’ve bolded what I consider to be most important as part of your vegan transition.

Vegan Pantry Staples For Baking

Whole Wheat Flour
Baking Powder
Baking Soda
Ener-G Egg Replacer
Flax Seed Meal
Raw sugar (turbinado, german rock sugar)
Vanilla Extract

Vegan Pantry Staples For Snacking

Oatmeal (Steel cut or rolled oats)
Nuts (any of them, all of them!)
Nut butters (peanut, almond, hazelnut etc.)
Whole grain cereals
Dried fruit
Granola
Rice cakes
Popcorn kernels
Whole grain, multi grain breadsWhole grain, multi grain wraps
Whole grain, multi grain pita bread

Staples For Cooking 

Oils (olive, coconut, safflower, canola)
Low sodium soy sauce (I love Trader Joe’s Soyaki sauce as well)
Apple Cider Vinegar
Salt & Pepper
Cumin
Curry Powder
Garlic Powder
Onion Powder
Cayenne Pepper
Nutritional Yeast
Tahini

Grains/Legumes/Beans

Brown Rice
Wild/Bhutan Rice
Quinoa
Lentils (red or green)
Chia Seeds
Flax Seeds
Beans (canned or dry) ALL OF THEM! Black, cannelli, kidney, garbanzo, refried

Fridge

Any and all fresh vegetables and fruit like…
Kale, carrots, cucumbers, tomatoes, avocado, sweet potatoes, onions, chard, spring mix, avocado, spinach, celery, beets, apples, grape fruit, bananas, strawberries, blueberries, raspberries, bell peppers, mushrooms, brussel sprouts, asparagus, squash, turnips etc. (Every time I go to the grocery store I like to buy one kind of vegetable I’ve never tried.)
Hummus
Mustard
Tofu (firm and/or silken)
Tempeh
Almond/Coconut/Soy/Hemp/Rice milk
Soy yogurt
Earth Balance buttery spread

Freezer  

Frozen veggies
Amy’s (or other) prepared foods
Frozen fruit
Frozen garlic/herb blocks
Edamame
